Salmon Stacks


A parent gave me a gift certificate to a local book store which is one of  my favorite gifts to both give and receive.  I took myself on a shopping trip and guess what I bought.  Right - a new cookbook ----- just what I need.

I look at it this way.  I could collect diamonds or new cars or even pictures for the wall and they would a be a lot more expensive.  Of course, I didn't pay for this, anyway.  I think, I had better add onto this, I am thrifty, not cheap but thrifty.   As a result, I look for the best price, do without when necessary and I am not an impulse shopper.

The cookbook, I got as a GIFT, is called Dining In Again and I have never seen it before.  I know it is a good cookbook because I went through the book and never realized that it almost has no photos.  Before each chapter, there is a page of photos.  There are four recipes on two pages with nary a photo and it doesn't bother me, in the least.  When I went to cook my first recipe, from the book, I didn't look for a photo.  I knew what it was going to look like.  I don't get it either and maybe after additional recipes, I will figure it out.

Salmon Stacks


2 onions, chopped
2 tablespoons olive oil
4 slices of smoked salmon, cut into small pieces
3/4 cup mayonnaise
1 tablespoon mustard
1 1/2 teaspoons lemon juice
3 eggs
3/4 cup Rice Dream


Preheat oven to 350 degrees.
Saute chopped onions in olive oil unti golden.  Set aside.
Place smoked salmon bits into a large bowl.  Add remaining ingredients.
Add cooked onions.  Mix in.
Transfer to a baking dish or into ramekins.
Bake for 30 - 35 minutes.  Mine took more but it depends on the size of the pan, you are using.  If made in a pie shallow pie plate, it should take less time.
When it cools slightly, top with a slice of tomato and some scallions.
Enjoy.
