July Fourth Brunch


I do wonder if anyone else had a brunch on the 4th of July. We did. My oldest son with his oldest daughter came over and we ate eggs,bagels and lox, potatoes, muffins, brownies and whatever else came our way. I love brunch. I wish all my guests or family would come for brunch.

This recipe is from AllRecipes and I adapted it for us.

Brunch Egg Bake

2 cups shredded Mexican Cheese Combo
1/3 cup sliced green onions
1/2 cup chopped sweet red pepper
2 tablespoons olive oil
8 eggs
3/4 cups milk
1/4 cup gluten-free brown rice flour mixture
2 tablespoons minced fresh parsley
1/2 teaspoon dried basil
1/4 teaspoon pepper
 
In a medium skillet, saute onions and red pepper in olive oil until tender; drain.  


In a bowl, beat eggs. Add milk, flour, parsley, basil, and pepper; mix well. 

Add vegetables and cheese to egg mixture.  Mix well.

Bake at 350 degrees F for 35-40 minutes or until a knife inserted near the center comes out clean. 

Let stand 10 minutes before cutting.

  6. I made a variation of this recipe this morning. I didn't have all of the ingredients that your recipe calls for so I substituted a few things. It came out great! I did a post on it and linked back to your blog. :)
