Cranberry Oatmeal Walnut Cake - THB

The latest bake for THB, the Home Bakers is Cranberry-Oatmeal-Walnut Cake, selected by Kit from I-Lost In Austen.  The recipe is on her blog.  She made these huge muffins.  What a treat!

I made mine gluten-free so I never know how to compare it to those are baking with "real" flour.  This cake called for a full one and a half cups of oats.  All in all, it was not sweet enough for my taste.  Some of the bakers used dried cranberries which are sweeter and had a better cake.  The fresh cranberries are quite tart and even hubby commented on it.

  2. Chaya, I love your moist, scrumptious, and colorful cake, filled with cranberries...which is so perfect for the fall season. Also, tracking back to your two previous posts; The tomato sauce with the turkey meatballs, is for sure a different version; by Nigella who I adore, and love her recipes.

    You did an outstanding job of the sauce and the meatballs...seriously drooling over the velvety tomato sauce, and the yummy little meatballs...a must make (I have always made my sauce with fresh basil, but thyme is so perfect, as well)
    Your roast (capcicum)...peppers, with the chicken, and the penne, is awesome, and love it! Bookmarking all these to try...thanks for sharing!

    Your are right, these are not sweet at all. And the frozen cranberries that I've used are really sour! I ate of the muffins myself, for breakfast and tea break. On the plus side, this is a healthy snack!
