Cabbage Pancakes

I have discovered that using cabbage in unusual ways results in making delicious dishes.  I decided to look up recipes for cabbage pancakes and found many.  Two appealed to me, the one below and another that was a partial potato latke and a partial cabbage latke combined.  I hope to make it also. These pancakes were delicious and served with a little soy sauce mixed with a bit of honey, even better. Cabbage Pancakes (adapted from Healthy Recipes) Ingredients Pancakes: 16 0unces shredded coleslaw 1 red onion, sliced 2 tablespoons gluten-free flour 4 large eggs 1 tablespoon reduced-sodium soy sauce ¼ teaspoon black pepper 1 tablespoon minced garlic olive oil for frying Method: Heat a large skillet (I have a huge electric skillet, I used ).  Add olive oil. Menu Plan Monday

This week, I got most of my recipes from Taste of Home Comfort Food.  Taste of Home is great, particularly when you want good simple food with limited time to make it.  Their food looks good and usually is a success.  This week is a busy one (like every other week isn"t?) and I decided to fill in the meals to make using the Comfort Food book.  Tuesday night is for Donna Hay and Wednesday is for Ellie Krieger.   We have our soup night, breakfast night, pasta night and chicken night.  This week, I am missing an evening for salmon which is unusual. Turkey Sausage Meatloaf

I had seen a recipe, once upon a time, for burgers that included apples with the turkey.  With this in mind, I put together this meatloaf.  The taste was unbelievable.  The mixture of chopped turkey with the sausage gave it a spicy background that was the background for the additional spices. Apple, Sausage Meatloaf 1 1/2 pounds ground turkey  2 medium apples, diced 3 sausages, fine diced (I used food processor) 1 tablespoon parsley 1/2 teaspoon ground black pepper 1/2 teaspoon ground nutmeg 1/2 teaspoon sage 2 large eggs, beaten Topping: 1/4 cup soy sauce 1 tablespoon honey Method:  Preheat the oven to 350°F.  Combine turkey, sausage, apples, parsley, sage, pepper, nutmeg and eggs in a bowl.  Place meatloaf mixture into loaf pan or casserole.  (I sprayed pan with cooking oil but it probably does not need it. No Name Cheese Recipe

I felt a need for cheese. I kept thinking of quiche, pizza, mac and cheese, spaghetti with Parmesan, Feta with anything..........big chunks of cheese, sliced cheese, squishy cheese, smelly cheese.....just cheese. What do you do when you see cheese in everything? ---- You grab a piece of cheese and while eating it, you start to cook. At least, that is what I did. This recipe has no name and I can't think of one. A recipe really needs a name, doesn't it? A recipe without a name is like water without a glass. It is nebulous. So, what name should I give it. These are the facts: It has Gouda and Parmesan. Scallions and tomatoes. It is broiled. It has my least favorite ingredient - mayonnaise. It is delicious. It has that nice brown top from the broiler. Chinese Vegetable Soup with Chicken

This week, I was the lucky lady to select the recipe we have cooked for our Eating With Ellie group.  I asked someone to pick up the ingredients, I needed but must have made some mistakes.  I found a package of stir fry vegetables and separated the snow peas, added some of the green beans and used them.  I rarely keep scallions in the house so I subbed in red pepper. I did not like the mushrooms in the soup although I usually like mushrooms.  This soup lends itself to many vegetables.  Broccoli or spinach would fit right in.  The bok choy was an excellent choice by Ellie. Spinach and Butternut Squash Salad with Nuts and Cranberries

I like the colors of this salad, the golds, greens and wine colored.  They make for a pretty plate to present. Spinach and Butternut Squash Salad with Nuts and Cranberries Ingredients: 2 cups butternut squash, peeled and cut into ½-inch cubes 2 tablespoons olive oil 2 tablespoons butter 2 tablespoons brown sugar ½ cup walnuts 2 tablespoons red wine vinegar 2 teaspoons honey salt and pepper to taste 4 cups of baby spinach ½ cup dried cranberries Method: Roast or boil squash cubes.  I boiled them and some overcooked so I recommend roasting. Melt butter in a saucepan over medium heat.  Once the butter bubbles, stir in brown sugar, followed by walnuts.  Sauté nuts; stir frequently until coated with mixture, 6 minutes.  Remove from heat and allow to cool completely.  Whisk vinegar, honey, remaining 4 tablespoons olive oil, salt and pepper to taste in a small bowl.  Combine spinach, sq...

Pan Roasted Chicken Cutlets with Maple Mustard Sauce

I love to leave the chicken breasts plump and not flatten them for this particular recipe.  We end up getting this juicy and most chicken immersed in flavor.   Crusty Chicken  Cutlets with Maple­ Mustard Sauce  ( adapted from  Cooking Light ) Ingredients: 4  skinless, boneless chicken breast halves 1/4 teaspoon salt 1/4 teaspoon black pepper Cooking spray  2 tablespoons chopped red onion 6 tablespoons maple syrup 1/4 cup Dijon mustard 1 tablespoon water 1 teaspoon chopped fresh dill Breading: 2 cups gluten-free panko crumbs   Method: Preheat oven to 350 degrees. Sprinkle chicken evenly with salt and pepper. Heat a large nonstick skillet over medium ­high heat. Coat pan with cooking spray. Combine remaining ingredients.
