Menu Plan Monday This week starts a new and exciting group featuring the recipes of Ellie Krieger.  I belonged, in the past, to a group that cooked Ellie recipes and hubby could not wait for  his weekly Ellie treat.  He really loves her recipes.  They tend to be healthy, easy to make, and really yummy.  We are using Weeknight Wonders plus recipes we find on the Internet for our choices.  The group is open so if you are interested, please let me know. The star of this week is Rachel Ray.    I started with her book and ended up looking for specific recipes online.  I finished up with a nice selection, some which I can't wait to make. Layered Mushrooom Bread

I made a few mistakes with this recipe.  I made my bottom layer too shallow so the mushroom mixture was almost on the bottom of the pan.  I should have used a larger, flatter pan.  This comes out like a corn bread rather than a kugel which the original recipe called it.  Check it out on Joy of Kosher. Sliced and warm, it is a nice bit of bread.  For a kugel, I don't see it. Layered Mushroom Bread Ingredients 10 - 12 oz. mushrooms, chopped,  1 cup onion, chopped 1 tablespoon olive oil 2 cups yellow cornmeal 3/4 teaspoon salt 1/2 teaspoon baking powder 1 cup rice milk 1 cup Tofutti sour cream 2 eggs, beaten 3 tablespoons olive oil Method: Preheat oven to 450 degrees. Herby Frittata with Vegetables and Goat Cheese

I must make a confession.  When I see the words, "goat cheese" in a recipe, I almost always make it.  Goat cheese has a delicious flavor and it seems to improve every dish,it is incorporated in.  It certainly worked well with this frittata. Originally, I was using a dish from a magazine but by the time I finished cooking it, there was no real resemblance to the original.  I used spinach instead of asparagus, added in smoked salmon, baked instead of broil, added onion. While this is a frittata which was the original, I can't imagine much else about it that is the same. Baked Potato Soup

T his is supposed to be a baked potato soup but due to limited time, I boiled the potatoes.  Other than that, I basically followed the instructions with a few minor modifications.  I left the directions for baking, thinking it might be a more interesting recipe.  Boiled potatoes worked out fine and we had a delicious soup.  I admit, I am a big fan of potato soup and have not met one, I didn't like. Spinach and Caramelized Onions Grilled Cheese

I think, grilled cheese is universally liked.  It has changed over the years.  When I was a kid, grilled cheese was a slice of American cheese with a slice of tomato, grilled.  It was delicious then but now it has taken on a new life.  Grilled cheese has many additions.  My favorite is avocado.  Although, after eating the caramelized onions and spinach on this one, I may have a new favorite. I also think that people often think of tomato soup as an accompaniment to the sandwich but I tried potato soup and it was a yummy combination. Darcy's Veggie Chili Soup

The idea of a chili soup is quite appealing, if you like chili, which we do.  We had this last week when the weather was North Pole style.  Going outside was a challenge if you were not bundled up from the tip of your head to your toes.  The wind was galloping to the point that it moved me a foot down the street.  Winter certainly arrived with a full force. This soup was just right.  It was warm and it was filled with goodies. Chinese Barbecue Chicken Soup with Noodles.

Tonight is a soup night for our Donna hay Group, chosen by Gaye.  For the rest of the gals, it is Chinese barbecue pork soup and for me it is Chinese Barbecue Chicken Soup with Noodles.  This turned out to be another easy recipe since it started with already cooked chicken broth, which we added some ingredients to, to give it a unique flavor.  I didn't like the ginger, we added but it not strong enough to ruin a good soup. I had to sub in for the green vegetables, meat and noodles but it still worked beautifully.  I cut large chunks of chicken as shown in the photo in Donna book, and ended up needing a knife to cut them smaller with.  Next time, I would cut them smaller.
