Cranberry Chicken QED

I have posted very few of my chicken recipes even though, I make it weekly, so here is one, I made last week.  This brings back memories of dishes, I made, many years ago, when I was newly married. I looked on the Internet for a recipe and found, after looking at a dozen of them, they are basically the same, so I decided on making up a recipe based on all of them.  This is a Quick, Easy and Delicious recipe. Cranberry Chicken Ingredients: 4 skinless, boneless chicken cutlets 1 tablespoon Osem dehydrated onion soup mix 8 ounces cranberry sauce 1/4 cup chili sauce handful of raisins or any dried fruit 1 teaspoon of lemon juice Method: Preheat oven to 350 degrees F . Place the chicken cutlets in a baking dish. Stir the onion soup mix, cranberry sauce, lemon juice and chili sauce together in a bowl until well blended. Pour over the chicken breasts. Butterscotch Blondie Muffins - Muffin Mondays

Here we are on Monday, my muffin day and also a linky for muffins at Talking Dollars and Cents. Net.  I love making muffins because they are so easy, yet they are versatile and delicious.  Muffins are better than cupcakes, in my opinion, because they are usually less sweet. For this week I made a Cooking Light recipe which was actually for Toffee Blondies.  When, I started to set up the recipe, I was also making blondies.  That is until, I tried to put the batter into the square pan.  It was too thick and and too sticky and didn't fill the bottom of the pan.  Waste not, want not, I put the batter into 6 muffin cups and I got blondie muffins.  Muffin shapes with the texture and look of blondies. Out of curiosity, I checked the top posts for this month.  I love the scrambled egg muffins also and because they are different, being first, did not surprise me.  It did surprise me to see the Cheesecake Factory Cheesecake on the list although, it is a delicious dessert.  Then I realized that another copycat recipe is on the list and it is a year old, the Olive Garden Minestrone Soup.  I love making copycat recipes and you may find more here, if that is what you are looking for. Green Chicken Stir-Fry

A stir-fry is wonderful, making a meal in a pan and cooking it, in a liquid.  I am presently cooking another one with leftover chicken from the Sabbath and carrots and bell peppers, sweet and sour style. Green Chicken Stir-Fry Ingredients: Marinade and Chicken: 1/4 cup soy sauce 1/2 teaspoon garlic powder 1 tablespoon brown sugar 1 teaspoon grated fresh ginger 3/4 pound boneless, skinless chicken , sliced into 1/2-inch thick strips ( I used  a pound  for two of us.) Stir-Fry: 1 Tbsp. olive oil 2 medium onions , diced 1 cup frozen broccoli 1/2 cup frozen peas Soy sauce , if needed 1 Tbsp. chopped scallions Method: In a Pyrex dish or bowl, combine the soy sauce and seasoning.  Grate ginger into the bowl. Place the chicken into the dish, cover and refrigerate for several hours or overnight to marinate. Heat the oil in a wok or large sauté pan over high heat. Bake with Bizzy - Pecan Muffins

I know it is not Muffin Mondays but I baked muffins and I want to share some thoughts.  Muffins leave the door open to a wide range of choices.  One of my favorite muffins has a spoonful of jelly inside of it.  I don't make chocolate chip muffins but it is a good idea.  I like fruit inside a muffin from fresh blueberries to dried pears.  My husband's favorite is a muffin with pecans. Of course, you can use vanilla extract but what about rum, strawberry or coconut.  Mix up the flavors and the filling and create your own brand of muffin. I made a basic muffin recipe which is found in almost every cookbook and Internet site.  The differences are small.  I use oil in my muffins.  Some of the recipes used butter.  Others use applesauce.   Since, I added 1/2 cup of pecans, I will label these Pecan muffins.  They were, of course, for the nut lover, in the family. Here comes Tuesday, when Chaya lets me scout around, searching for good recipes and tempting photos.  Bizzy the Explorer (that's me) is searching for soup.  Isn't soup wonderful when the weather is cold and trust me, it is cold here.   Coming home to soup, bubbling away, on the stove, is a dream come true.  That would be for my husband.  I come home and the stove is cold and the soup is still that dream.
