Candy Corn Sugar Cookies - Martha

Image
I am guessing that when you hear candy corn cookies, you picture cookies, shaped and colored to look like candy corn.  They are adorable and I am sure take more work than I put into this easy recipe.  This is a quick, easy and delicious recipe.  You can make these in chocolate and plain.  I stayed away from the chocolate and made another recipe for them that was chocolate. I made these for my class and I don't put a lot of effort in what I bake for them.  I would not consider them my most discerning judges.  It is usually, when I take a plate of goodies out, the cheers come.  This class is more picky than others, and don't even like peanut butter in cookies.  Mint and coconut are out, as well.  Even marshmallow is considered great.  This makes it easy for me.  They will get thumbprint cookies, chocolate and sugar cookies and some cake. Vegetable Latkes

Image
I had such success adding carrots to potato latkes, I decided to be even more daring and add carrots and zucchini.  This was tasty but I doubt that the zucchini caused this.  The carrots and onions probably gave it the flavor.  These went quickly and I consider them a success. I am playing around with different kinds of latkes and still have a number more to make.  I do want to bake some of these, probably a thicker one than this.  The fried ones are crispy and the baked ones, less so.  Tonight, I made cottage cheese latkes.  These can be made with ricotta as well.  I have one with cream cheese, I want to try as I am a fan of cream cheese. All week, I wanted to make cauliflower latkes and I am hoping that I do this tomorrow.  Latkes are fun and although, I certainly could make them, all year, I tend to keep them for Chanukah.   Vegetable Latkes Ingredients: 4 large baking potatoes 3 carrots 1 medium zucchini 1 large onion...

Friday Favorite Finds

Image
Finding Joy in My Kitche n has a Friday linky, titled Friday Favorite Finds where we get the opportunity to share some of those wonderful recipes, we see during the week. Maybe, they are recipes, we want to make or perhaps they are recipes that just strike us as being fantastic but not for us. Since we eat gluten-free, you can imagine how many recipes, I come across that I won't be making. To be honest, if one is gluten-free, one can still manage to make most dishes but that doesn't mean that I always want to do that. These are the recipes, I look for, those that strike me and say, "this is you," or, "admire me."  Something about them touch a chord in my heart or perhaps, my tummy. This week, I discovered and loved the following: First, I want to share this amaretto pie. Isn't this a beauty. I found this on Deelicious sweets . Great, spell-check is giving me a hard time on delicious/deelicious. I started with dessert so let's go to...

Bake With Bizzy - Chocolate and Peanut Butter Brownie Bites

Image
With a name like the above, who could resist making these?  Not me.  I decided to make these for my class but they may be too gooey to bring to school.  I think you will see how fudgy the brownies are from the photos. I found the recipe online so I don't have to retype it which I admit, makes me quite happy.  I love blogging.  I don't love typing the recipes.  There is a photo of their brownies that is nicer than mine so if you want to see it, in all its glory, go on over and take a look. This recipe is better than the one in the book since it gives you a few hints that I did not find in The Neely's Celebration Cookbook. Chocolate and Peanut Butter Brownie Bites Brownie Batter:
3⁄4 cup (1 ½ sticks) unsalted butter 2 cups semisweet chocolate chips – divided
1⁄2 cup all–purpose flour,  1⁄2 teaspoon baking powder  1⁄4 teaspoon table salt
1⁄3 cup packed light brown sugar  1⁄2 cup granulated white sugar
 2 l...

Bizzy the Explorer Searches for Corn

Image
Hi Everyone, I am back and this week, I am looking for corn recipes.  Why corn?   I love it.  I want to expand my corn recipes and I do keep running into them, on my travels.  Stay with me and see how to make corn wearing different hats. We find corn in a variety of types of dishes.  As an example, look at this tamale pie from All That Splatters.   It is the topping that really appeals but look at the corn mixed in with the meat. Zesty Creamed Corn from Savoring Time in the Kitchen    I think, my favorite corn dishes are creamy but I like it in everything. Summertime Succotash Salad - This is a beauty.  I wish it were summer. from My Carolina Kitchen Roasted Corn and Potato Soup from What Would Cathy Eat   The truth is that I love both potato soup an corn soup so what could be better than having both vegetables in one soup? Go and make some corn.
