This is an old recipe, I am reposting to submit to the Healing Foods Event . Spicy Chicken and Mango Stir Fry Cat Cora There is a lot of flexibility in this recipe.  Select your favorite recipes.  Add a special spice.  Play with it and create your own dish.  It should be good.  I added tomatoes to the recipe, subbed peas in place of snow peas, which I do not have, and added brown sugar and pumpkin pie spice to the marinade.  I am going overboard, including pumpkin pie spice in many recipes but it works.  It brings a subtle flavor and aroma.  I also grated ginger into the marinade which magnified the pumpkin pie aroma. Japanese Zucchini and Onions

I buy many vegetable for Passover, twenty pound bags of potatoes, ten pound bags of onions, ten pound bags of carrots and then I fill the basket with all kinds of squash.  In my heart, I know that I am not going to use all those squash and sure enough, close to the end of the holidays, I found a dozen zucchini, 3 butternut squash and 2 acorn squash.  I also found a dozen sweet potatoes, a dozen oranges and about ten lemons.  I was not going to let these vegetables defeat me and I started cooking. One way to use the zucchinis and onions was in the following dish.  You will find, within a few days a potato zucchini recipe on  Bizzy B. Mango Chutney on Broccoli

I discovered mango, this year, and both hubby and I like it.  This was an unusual way for us to use it, not seeing it with a vegetable but it worked.   This is a second time around recipe because I am sending it to Healing Foods. Mango Chutney on Broccoli Ingredients: 1 bag frozen broccoli 1 bag of  frozen mango and one half of a can of mango (left over from salmon recipe) 1 cup chopped onion 1 cup red pepper, chopped 1/2 cup water 2 tablespoons brown sugar 1 tablespoon curry powder 1 tablespoon fresh lime juice 1/2 teaspoon black pepper 1/2 teaspoon ginger seasoning 1/4 teaspoon salt   Method:   Combine all ingredients in a medium saucepan   Bring to boiling point.   Reduce heat, and simmer 15 minutes until mixture is thickened. Gefilte Marinara - Jamie Geller QED

I wanted a different way to make the gefilte fish, this week and I came across this recipe by Jamie Geller, an author of kosher books.  Mine is not marinara.  It is more Turkish because of what I subbed for the marinara sauce.  I have made gefilte fish in marinara sauce and it is really good but for Passover, I try to change recipes so we can  explore new tastes. Gefilte Marinara  Adapted from Jamie Geller Cook Time:    2 hours Yield:              8 servings Ingredients: 1 (22-ounce) loaf frozen gefilte fish 1 tablespoon onion powder 1 medium onion, chopped 1/3 cup matbucha (from bottle) Method: 1.  Preheat oven to 350° F.  Spray a 9 x 5 x 3-inch loaf pan with non-stick cooking spray. 2.  Rinse frozen gefilte loaf under water to remove parchment wrapper and place in prepared pan. 3.  Sprinkle fish with onion powder. 4.  Cover with chop...

Great Grain Muffins - Baking with Dorie

I am offline for a few days and I have saved this as scheduled, hoping it will be posted on the right day.  Baking with Dorie is close to my heart and I hate missing it so I am going to hope a weak try will suffice, for this month. I am not sure who selected this or much of anything else.  I baked it a while back for Tuesdays with Dorie and I am thrilled, I can participate, even a bit shakily. I made these gluten free and subbed corn meal and a rice mixture.  I am sure it did not taste like those that were made of all those interesting grains, we don't eat but it was filled with enough goodness to be very enjoyable. This is a great group so if you like to bake and are not part of Tuesdays with Dorie, you might like to join us at Baking with Dorie.   We bake twice a month and we have had lots of fun doing this.  There are some great recipes coming up.  I can't wait.

Silky Sweet Potatoes

Silky Sweet Potatoes I got the idea for this delicious side dish from Tamar Ansh.  She kept me busy, last Passover and is doing so again, this year. Silky Sweet Potatoes  (adapted) Ingredients: cooking spray 4 sweet potatoes, peeled salt 2 tablespoons vegetable oil brown sugar Method: Spray two baking sheets with cooking spray. Preheat oven to 350 degrees  Thinly slice potato,  using food processor.              In bowl with large flat bottom, put 3 tablespoons brown sugar and 2 tablespoons oil.  Add as you go along. Put pieces of sweet potato in bowl.   Spray the tops of the potatoes and cover with brown sugar. Arrange slices on baking sheets without overlapping.   Bake until lightly browned, about 15 minutes.   The recipe in the cookbook said to bake for 45 minutes.  I am baking these again for only 15 minutes.  I will change this, if necessary.
